What is sulforaphane ?

Sulforaphane is an isothiocyanate, a natural compound found in cruciferous vegetables (such as broccoli, Brussels sprouts, and cauliflower) in its precursor form, glucoraphanin.

Cruciferous vegetables are naturally rich in glucoraphanin, the precursor of sulforaphane.
To become biologically active, glucoraphanin must be hydrolyzed in the intestine by the enzyme myrosinase, which is present in the gut microbiota. Cruciferous vegetables also contain myrosinase, which can be activated through chewing.

In practice, however, this conversion process is often limited and unpredictable:

  • Cooking or improper storage conditions can destroy the myrosinase naturally present in cruciferous vegetables, preventing the formation of active sulforaphane.
  • Even when consumed raw, sulforaphane formation relies heavily on myrosinase activity within the intestinal microbiota, which varies considerably from one individual to another.
